Executive Head Chef required to manage the day to day running of a High end 4* Hotel operation to include menu planning, purchasing, service of all meals, team recruitment and development, stock control and HACCAP. Previous experience of managing a large scale operation would be desirable along with international experience.

 

Main Duties:

  • Oversee the smooth running of the kitchen to ensure excellence at all times and delivery of all food requirements
  • Implement a cleaning schedule for the kitchen in accordance with HACCAP guidelines covering daily, weekly and deep cleaning
  • Financial management within the kitchen to include costing of all menus, portion control, ingredient specification, stock control, payroll costs and budgeting etc
  • Staff development including recruitment, training and appropriate leadership
  • Maintaining necessary reporting, managing costs and ordering and receiving goods for the department
  • Ensuring all waste for the department is disposed of according to legislation and the highest environmental standards
  • Ensure all requirements of HACCAP are met to the highest standards
  • Ensuring staff have the appropriate training for all equipment in use and that equipment is well maintained
  • Ensure the health and safety policy of the house is implemented as it relates to the kitchen department

  • Excellent standard of hygiene – EHO reports, HACCAP audits etc

Skills & Knowledge

  • The successful applicant will need to have experience of a number of Michelin establishments along with International experience from the 5* Deluxe Hotel Industry
  • Nutritional and dietary
  • Professional Chef Qualification
  • Needs to be very proficient in all technical areas of the kitchen
  • Good training and coaching skills
  • Creativity in menu creation and planning
  • Computer literate

 

Salary will be in line with experience
