Sous Chef – Luxury 4 Hotel – Laois

Salary: €50,000 – €55000

An exceptional opportunity has arisen for an experienced Senior Sous Chef to join the culinary leadership team of a luxury 4-star hotel in Laois. This is a hands-on, fast-paced role supporting the Head Chef in delivering excellence across all kitchen operations.

Key Responsibilities:

• Oversee day-to-day kitchen operations and support smooth service delivery

• Maintain the highest standards of food preparation, consistency, and presentation

• Lead and supervise the kitchen team, fostering a positive and professional environment

• Contribute to menu development, recipe creation, and seasonal planning

• Manage stock levels, food ordering, and supplier liaison

• Ensure full compliance with HACCP and food safety regulations

• Train, mentor, and evaluate junior chefs and kitchen staff

• Take full charge of the kitchen in the absence of the Head Chef

Requirements:

• Minimum 3–5 years in a similar Sous Chef or Senior Chef de Partie role in a high-volume, quality-focused kitchen

• Strong leadership, organisational, and team development skills

• Excellent culinary ability and attention to detail

• Proven knowledge of food safety, hygiene, and kitchen compliance

• Calm and composed under pressure with excellent communication skills

• Passionate about high-end cuisine and guest satisfaction
