Experienced Executive Head Chef required for a high standard five star hotel. The role is to manage the day to day running of the kitchen to include menu planning, purchasing, team recruitment and development, stock control and HACCAP. The candidate must have held an Executive/Head Chef role previously.

Candidate Requirements:

  • Oversee the smooth running of the kitchen to ensure excellence at all times and delivery of all food requirements.
  • Assuming full responsibility for the production of food and to constantly drive new and innovative menu options.
  • Ensuring that all daily menus are balanced and meet our customer requirements of producing high quality food.
  • Insisting that high quality, Irish ingredients are used in the preparation of all meals.
  • Ensuring that all client requirements are met. He/She will be flexible in their approach and will have a fine ability in delivering bespoke hospitality events.
  • Achieving budgeted gross margin through consistent costings and menu planning.
  • Managing labour productivity and food cost to ensure that budget targets are achieved.
  • Ensuring the highest standards of Health and Safety and HACCP are maintained in the catering facility.
  • Managing and developing the kitchen casual team, to hold the team accountable to delivering high quality culinary experiences.
  • Excellent knowledge of both Irish and international food trends.
  • Financial management within the kitchen to include costing of all menus, portion control, ingredient specification, stock control, payroll costs and budgeting etc.
  • Staff development including recruitment, training and appropriate leadership.


  • Role Requirements:
  • Must have held the position of Executive Head Chef previously.
  • Must have high volume experience in previous role.
  • Flexibility and the ability to innovate.
  • Commercial acumen, Strong organisational and problem solving abilities.
  • Knowledge of HACCP and ability to implement a HACCP Plan.
  • Food costing knowledge.
  • Ability to teach, mentor and inspire staff.
  • Ability to maintain standards, quality and innovation on a daily basis.
  • Have a passion for food.
  • High attention to detail.
  • First class communicator with hands on approach for this busy role.
  • Must be target driven, have an excellent understanding of finances, costs , labour control, time management.
  • Hard-working and ambitious and willing to go the extra mile in pursuit of delivering exemplary food.
  • To create an environment which promotes employee morale and encourages the team to have pride and commitment in their work
  • Be accountable and resilient and have the ability to work under pressure
  • Professional Chef Qualification.
  • Needs to be very proficient in all technical areas of the kitchen.
  • Good training and coaching skills.
  • Creativity in menu creation and planning.
  • Salary in line with experience.
