Executive Sous Chef

Executive Sous Chef to work alongside Executive Head Chef in the successful operation of the kitchen and back of house areas. You will ensure the delivery of the provision of the highest standard of food production in a cost effective manner. In the absence of Executive Head Chef you will be responsible for the kitchen operation. 

  • Ensure budget GP targets are  met and achieved
  • Ensure the maintenance of HACCP in all food production areas
  • Constantly strive for innovative and imaginative menus
  • Ensure all staff in kitchen are trained and adhering to company standards
  • Complete departmental rosters to ensure adequate staffing levels in line with business levels, ensuring wage percentage is kept in line
  • Attend management meetings as required
  • Conduct job chat and performance appraisals as required
  • Ensure all Health & Safety is completed and up to date in kitchen
  • Assist in outlets as required to ensure food is delivered to customers in a speedy manner and is at the required company standard
  • Strong financials knowledge 
  • Experience of ordering and using on line ordering system
  • Leading, training and development of team in kitchen
  • Previous experience as an Executive Sous or Sous Chef coming from a busy, high volume hotel with experience of multi site operation
  • Salary €45-50
  • Rented Accommodation if required is available if relocating
