Executive Sous Chef

4* Dublin hotel is looking for an experienced Executive Sous Chef to join their expanding team.

Main Responsibilities:

• Executive Sous Chef to assist in the design and delivery of new menu concepts which reflect customer demand. 
• Executive Sous Chef to manage and oversee the smooth running of the day to day operation in the kitchen.
• Executive Sous Chef to maintain consistently high standards and quality across all areas of the food operation. 
• Executive Sous Chef to understand the budget and work to the agreed targets on food cost, labour hours, sundries, and wastage. 
• Executive Sous Chef will assist with recruitment, training and retention of team members. 
• Executive Sous Chef will manage of the kitchen payroll on a weekly and monthly basis. 
• Executive Sous Chef will set personal and department objectives for direct reports and to monitor and review on a regular basis. 
• Executive Sous Chef will review staffing levels to ensure that guest service, operational needs and financial objectives are met. 
• Executive Sous Chef will be responsible for purchasing, receiving and food storage policies and procedures.

The Ideal Candidate:

• Executive Sous Chef should have a Minimum 2 years’ experience in a similar role within a 4*property
• Executive Sous Chef should have a creative flair and passion for cooking with local, fresh, seasonal and quality ingredients. 
• Executive Sous Chef must have experience to manage a team and have great organisational skills. 
• Executive Sous Chef will be proactive, reliable & innovative.
• Executive Sous Chef should have strong banqueting experience
• Executive Sous Chef must have HACCP Qualification to Management level. 
• Executive Sous Chef must have experience in managing a diverse and dynamic team. 
• A progressive attitude towards training, developing and motivating the kitchen brigade. 
• Executive Sous Chef  will have the ability to lead by example within a fast paced kitchen environment
