Executive Sous Chef

A beautiful Hotel in Wicklow is searching for an experienced Executive Sous Chef to join their wonderful team.

Main Responsibilities:

  • • To assist in the design and delivery of new menu concepts which reflect customer demand. 
  • To manage and oversee the smooth running of the day to day operation in the kitchen. 
  • To maintain consistently high standards and quality across all areas of the food operation. 
  • To understand the budget and work to the agreed targets on food cost, labour hours, sundries, and wastage. 
  • Recruitment, training and retention of team members. 
  • Management of the kitchen payroll on a weekly and monthly basis. 
  • To set personal and department objectives for direct reports and to monitor and review on a regular basis. 
  • Reviews staffing levels to ensure that guest service, operational needs and financial objectives are met. 
  • Maintains purchasing, receiving and food storage policies and procedures.

The Ideal Candidate:

  • Minimum 2 years experience in a similar role within a 4-5* property (More for senior)
  • A creative flair and passion for cooking with local, fresh, seasonal and quality ingredients. 
  • Management and organisational skills are essential. 
  • Strong banqueting experience is desirable. 
  • HACCP Qualification to Management level. 
  • Experience in managing a diverse and dynamic team. 
  • A progressive attitude towards training, developing and motivating the kitchen brigade. 
  • An ability to lead by example within a fast paced kitchen environment striving to create amazing dishes.
