Executive Sous Chef

A beautiful Hotel in Wicklow is searching for an experienced Executive Sous Chef to join their wonderful team.
Main Responsibilities:
- • To assist in the design and delivery of new menu concepts which reflect customer demand.
- To manage and oversee the smooth running of the day to day operation in the kitchen.
- To maintain consistently high standards and quality across all areas of the food operation.
- To understand the budget and work to the agreed targets on food cost, labour hours, sundries, and wastage.
- Recruitment, training and retention of team members.
- Management of the kitchen payroll on a weekly and monthly basis.
- To set personal and department objectives for direct reports and to monitor and review on a regular basis.
- Reviews staffing levels to ensure that guest service, operational needs and financial objectives are met.
- Maintains purchasing, receiving and food storage policies and procedures.
The Ideal Candidate:
- Minimum 2 years experience in a similar role within a 4-5* property (More for senior)
- A creative flair and passion for cooking with local, fresh, seasonal and quality ingredients.
- Management and organisational skills are essential.
- Strong banqueting experience is desirable.
- HACCP Qualification to Management level.
- Experience in managing a diverse and dynamic team.
- A progressive attitude towards training, developing and motivating the kitchen brigade.
- An ability to lead by example within a fast paced kitchen environment striving to create amazing dishes.
