The Role

On behalf of our client, we are recruiting an experienced Restaurant Manager for a high-volume, standards-driven restaurant in well established hotel in Sligo

This role requires a hands-on hospitality leader with a proven background managing busy operations, large teams, and high service standards. You will have full accountability for performance, people, and guest experience.

Key Responsibilities

• Lead the day-to-day operations of a high-volume restaurant
• Manage and develop management and front-of-house teams
• Drive service standards, consistency, and guest satisfaction
• Oversee staffing levels, rotas, recruitment, and training
• Control costs, budgets, labour, and margins
• Monitor KPIs including sales, service, labour, and guest feedback
• Ensure full compliance with health & safety and licensing legislation
• Act as a visible leader on the floor during peak service periods

Candidate Requirements (Essential)

• Proven experience as a Restaurant  Manager
• Background in a high-volume, standards-led restaurant environment
• Strong leadership and people management skills
• Commercially focused with experience managing budgets and KPIs
• Excellent organisational and problem-solving ability
• Able to thrive in a fast-paced, high-pressure setting
• Flexible to work evenings, weekends, and peak trading periods
