Sous Chef – 4* Hotel Wexford
My client is looking for a Sous Chef for a 4* property in Wexford. This venue is known for its commitment to efficient and excellent service. This is a beautiful hotel looking to develop its kitchen team and food offering with an experienced Sous Chef who is comfortable running their own team and being responsible for their own kitchen.
The Role Requirements:
- Report directly to the Executive Head Chef
- Expedite food service from the main hotel bar
- Responsible for running a kitchen team of 5-10 chefs and kitchen porters
- Keeping the kitchen environment safe and hygienic, adhering to Haccp protocol
- Assisting the head chef when it comes to writing menus and creating new recipes
- Ensure proper rotation of stock
- Deputise in the absence of the Executive Head Chef
- Monitoring portion and waste control
The Candidate Requirements:
- Have a background based in busy venues with high volume kitchen production
- Knowledge of kitchen financials including stock control, roster management, costing and purchasing
- Passionate and energetic presence in the kitchen
- Team leader who places emphasis on motivation, training and development of their team
- Cares about food quality and maintains a keen attention to detail in food production and presentation
Salary Guide: €42-45k
