Broadline Recruiters are excited to recruit  a Senior Sommelier to Join an exceptional team for an established luxury hotel in Co. Clare. The ideal candidate will have a genuine passion for food and wine pairings offering clients an unforgettable experience. The role requires  the ability to stay calm under pressure during busy service periods while ensuring an exceptional guest experience.

Key Responsibilities:

• Oversee all aspects of wine service throughout Service including our Fine Dining and casual restaurants.
• Establish clear communication with guests, building rapport and ensuring excellent service.
• Ensure weekly wine orders are placed, and stock levels are maintained.
• Further develop the house wine list to reflect 5* standards, focusing on quality and variety.
• Stay up to date with the menus to provide the best wine pairings for each dish.
• Maintain and develop the wine cellar, ensuring optimal storage and inventory control.
• Carry out pre- and post-service duties to ensure smooth operations.
• Work efficiently and ensure that guest needs are met in a timely manner.
• Assist the Food & Beverage team with staff training and development.
• Ensure wine service standards are consistently upheld while seeking opportunities for improvement.

The Ideal Candidate:

• Minimum Level 3 WSET Certificate in wine or equivalent qualification.
• Extensive knowledge of multinational and regional wines across Old World and New World regions.
• 1-2 years’ sommelier experience, preferably within a 5* Hotel OR Michelin* Restaurant setting.
• Strong expertise in food and wine pairings and the ability to make expert recommendations.
• Passion for food and service, with a drive for innovation.
• Excellent selling skills and the ability to adapt to guest preferences.
• Strong organizational skills and the ability to think quickly under pressure.
