Broadline Recruiters on behalf of our client are currently inviting CVs for the role of Senior Sous Chef in Limerick with staff accommodation.
This is a key role reporting to and working closely with the Executive Head Chef and Directors
You will be responsible for ensuring that Food Preparation, Food Production and Food Service is carried out to the highest standard and in accordance with the Food Hygiene HACCP requirements.
Key Duties of this role:
• Prepare and Compile menus for daily business and functions using innovation.
• Order and ensure that all purchased food is of the agreed standard and within set budgets.
• Ensure that the preparation and production of all dishes conform to the agreed standards.
• Ensure the highest level of work cleanliness and hygiene is maintained throughout all Kitchen personnel’s duties and with compliance to Food Hygiene HACCP Regulations.
• Train new and existing chefs in Food Preparation and Food production of all dishes to the agreed standards.
• Be responsible for the recruitment, development and mentoring of the kitchen team
The Candidate must have:
• Minimum of 2 years’ experience working as a either Head Chef or Sous Chef in a Hotel or Banqueting Kitchen
• Ability to adjust to high pressure situations as they arise in a busy kitchen.
• Creative and innovative in their ideas for new dishes.
• Excellent Communication Skills
• Excellent knowledge of HACCP
