We are currently recruiting on behalf of a well-established hotel in Wicklow for a talented and driven Sous Chef. This is an excellent opportunity to join a professional kitchen team and play a key role in delivering high-quality food across restaurant and banqueting operations.

Job Summary

As Sous Chef, you will support the Head Chef in the day-to-day running of the kitchen, ensuring consistent food quality, smooth service, and strong team performance. You will be hands-on in service while maintaining high culinary standards.

Key Responsibilities

• Assist the Head Chef in managing all kitchen operations
• Prepare and oversee high-quality dishes across all service areas
• Supervise and train junior kitchen staff
• Ensure consistency, presentation, and portion control
• Maintain high standards of hygiene and HACCP compliance
• Support menu development and seasonal offerings
• Manage stock control, ordering, and minimise waste
• Step in to lead the kitchen in the Head Chef’s absence

Requirements

• Proven experience as a Sous Chef or strong Chef de Partie in a hotel or busy restaurant
• Experience with both à la carte and banqueting service preferred
• Strong leadership and organisational skills
• Knowledge of HACCP and food safety standards
• Ability to work in a fast-paced environment
• Passion for quality food and attention to detail
